Hi- Around here, we eat in a haphazard, but healthy fashion. Problem is I have a 12 year old daughter (not overweight, and an accomplished dancer) who craves potatoes. Good old fashioned white whipped potatoes. Do you have some satisfying healthier alternatives for her? Rolling Eyes

Hello Meri,

Personally I have no problem with organic potatoes, boiled, mashed, roasted, baked or scallopped! However, if you are looking for a tried and true alternative to mashed potatos, try Mashed Cauliflower.

Cauliflower is a significant source of Boron which is important for bone health and density.

1 cauliflower steamed
1 small onion
1/2 tsp. salt
1 Tbsp. butter
1/3 c. water
2 tsp. vegetarian chicken stock from Frontier Herb Co.
2 Tbsp. 1% milk or Silk Soy Milk
3 cloves roasted garlic

Wash and core cauliflower and cut into florets .
Steam or blanch in RO water and Veggie Chicken Stock until very soft (about 20 minutes)
Chop onion and sautee in butter or Willow Run Margarine until transparent and just starting to turn golden. Sprinkle with the salt as it's cooking
Put all ingredients into a food processor or blender and whip until smooth
Adjust seasoning -- sea salt and black pepper to taste and serve hot
Top with a sprinkle of Paprika and some finely chopped spring onion.
